At Lum Orng, the direction of the kitchen often begins long before service starts. It begins quietly in the garden.
Each morning, fresh herbs, edible flowers, vegetables, and seasonal ingredients are gathered from nearby farms and gardens before making their way into the restaurant’s kitchen in Siem Reap. Rather than working around fixed ingredients year-round, the menus evolve naturally with Cambodia’s changing seasons, harvests, and landscapes.
During the rainy season, the kitchen may highlight fragrant herbs, river fish, green peppercorns, and young tamarind. In warmer months, tropical fruits, native vegetables, and fermented ingredients begin to shape the flavors of the menu.
For Chef Sothea Seng, farm-to-table cooking is not simply about sourcing locally. It is about staying connected to the rhythm of the land and allowing ingredients to guide creativity.
This approach also reflects the philosophy behind Lum Orng’s interpretation of New Mekong Cuisine — contemporary Cambodian cooking rooted in regional traditions, local communities, and seasonal storytelling.
Every dish served at Lum Orng carries a sense of time and place. No two seasons are exactly alike, and neither are the menus.
